This cake is deliciously refreshing and so perfect for the hot months ahead! It is made with our Wolfe Heights organic olive oil, fresh lemons, and thyme.



  • ½ cup white sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 3 eggs
  • Zest of 3 lemons
  • ½ cup fresh lemon juice (about 2 lemons)
  • ¾ cup Wolfe Heights organic olive oil
  • ½  cup Greek yogurt
  • ½ teaspoon vanilla
  • 1 teaspoon fresh thyme, chopped

Whipped Frosting:

  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 7 oz. mascarpone cheese
  • ½ teaspoon vanilla
  • Pinch of salt


  1. Preheat oven to 350F.
  2. Combine flour, sugar, baking powder and salt in a large mixing bowl.
  3. Add the eggs, lemon juice, zest, olive oil, greek yogurt, vanilla, and thyme to a small mixing bowl and whisk to combine.
  4. Add wet ingredients to dry. Mix until well incorporated.
  5. Spray a bread loaf pan and evenly spread the cake mixture into the pan.
  6. Bake for 30-40 minutes, or until a toothpick comes out clean and the top is a nice golden..
  7. Make the Whipped Frosting: add the heavy cream and powdered sugar to an electric stand mixer and whisk on high until stiff peaks form. Add in the mascarpone cheese, vanilla, and salt.
  8. Allow the cake to completely cool before frosting.
